Couverture chocolate explained: a guide for cafés, pastry kitchens and home bakers

· Ghaf7

Couverture is the chocolate professionals use for tempering, enrobing, moulding and ganache. If you run a café, a pastry kitchen or bake seriously at home, understanding it will change how your desserts look and taste.

What makes chocolate "couverture"?

Couverture contains a higher proportion of cocoa butter than everyday eating or compound chocolate. That extra cocoa butter makes it flow more easily when melted and gives a glossy finish and a clean snap once it is properly tempered. Compound chocolate replaces some or all of the cocoa butter with other fats: it is easier to handle but does not taste or behave the same.

Dark, milk and white

  • Dark: the most intense flavour, ideal for ganache, mousses and enrobing.
  • Milk: creamier and sweeter, popular for bonbons, drinks and fillings.
  • White: cocoa butter, milk and sugar; a base for colour work and flavoured ganache.

The percentage on a dark couverture, such as 70%, refers to the total cocoa content. Higher is more intense and less sweet.

Tempering in brief

Tempering controls how cocoa butter crystallises so the chocolate sets glossy and snaps cleanly. A typical sequence for dark chocolate is to melt to around 45 °C, cool to around 27 °C, then rewarm to a working temperature of around 31 °C. Milk and white chocolate use lower temperatures; always follow the curve given for the specific chocolate you use.

Formats: callets or blocks?

  • Callets or drops melt evenly and are easy to weigh, which suits cafés and smaller kitchens.
  • Blocks are economical for large kitchens that chop and melt in volume.

Storing couverture in the UAE climate

Heat and humidity are the enemies of chocolate. Store it sealed, away from light and strong smells, in a cool, dry place, and avoid moving it between hot and cold environments, which causes bloom.
